Aren’t cherry tomatoes just like little garden jewels? Every year we grow cherry tomatoes and sometimes, sometimes they even make it into the kitchen…depending who picks them. Somehow they disappear between the garden and the house. Anyone else have this problem?

This is an easy to make salad that uses cherry tomatoes, cucumbers, cheese, fresh herbs, and whatever else is ready to harvest from your garden.

Gather the ingredients.

In this recipe I used the following vegetables from the garden:

A colorful fresh lineup.
  • Cherry tomatoes, cut in halves
  • Basil, oregano, parsley, minced
  • Green onions, sliced
  • Cucumbers, quartered then sliced
  • Sugar snap peas
  • Ranch dressing or your favorite vinaigrette dressing

Let’s get started!

  1. Gather fresh herbs and mince.

2. Next, clean and slice green onions. If you don’t have green onions, you can thinly julienne a small yellow onion.

Mmm…cherry tomatoes.

3. Next, cut all the cherry tomatoes in half. I had cucumbers and sugar snap peas ready from the garden so I added those.

Simply, cut a cucumber in half and scoop out the seeds. The seeds will add unwanted liquid to the salad. Next, quarter and cube a cucumber.

I took the sugar snap peas and stripped off the strings then rough chopped them for the salad.

Glorious cheese. Just add how much you want to handle. No judgement.

4. Shred cheese. I used cheddar because I had it on hand, but Provolone, Monterey Jack, or Colby would work too.

5. Combine all the ingredients together in a large bowl and add dressing until all the vegetables are nicely covered.
