Home Fries

I am sharing with you the fastest way to make home fried potatoes. My wonderful husband shared this with me and it has sped up preparation time like no other. Now you too, can get this dish on the table in half the time it usually takes.

{Disclaimer alert. I don’t measure when I cook so you will not find exact measurements of ingredients. Typically, my recipes can be scaled easily to suit your serving needs. What I can offer you is a new method to complete these dishes.}

Let’s get started…

1. I begin by dicing the potatoes. I do not peel my potatoes but this is a preference.

2. Next, place the potatoes in a microwave safe bowl and cover.

3. Heat the potatoes in the microwave for six minutes at full power. This will cook and soften the potatoes. There is no need to add water to the bowl as the moisture from the potatoes will be enough to steam themselves.

4. While the potatoes are in the microwave, I heat up my skillet.

5. When the microwave has finished, I remove the cover from the bowl to allow the steam to escape. I then drain the potatoes if there is excess water.

6. Slide the potatoes in the hot skillet, allowing as much moisture to evaporate as possible.

7. Then add oil to fry the potatoes until they are as crispy as I want them. I made the mistake of heating my oil with the skillet before adding the potatoes. Unfortunately, the potatoes still have carry enough water to make the oil splatter hence adding the oil after the potatoes. It is very contrary to most cooking methods.

8. I plate the home fries on top of folded paper towels, which will absorb extra oil from the potatoes.

9. I then sprinkle salt to my liking…which is a lot.

Serve them with a variety of sauces such as Sriracha Sauce and Buffalo Sauce. But nothing can beat just plain old ketchup.

  • Eggs and sausage patties
  • Hamburgers

Pre-steaming the potatoes is key to getting these home fries on the table on time.


  • 5 medium Potatoes more or less as needed
  • 1/4 cup cooking oil more or less as needed
  • salt to taste


  1. Dice washed potatoes on a cutting board.
  2. Place diced potatoes in a microwave safe bowl and cover. Do not add water to the potatoes.
  3. Cook potatoes in microwave for 6 minutes on high.
  4. Heat the skillet on the stove top.
  5. Remove the potatoes from the microwave and uncover to allow the steam to escape. Drain off any excess water.
  6. Slide the potatoes in the skillet, on low heat, allowing as much water to evaporate as possible.
  7. Add cooking oil to the skillet and fry the potatoes until they are your desired crispiness.
  8. Remove the fried potatoes from the skillet with a slotted spoon and place them on a plate with folded paper towels to absorb excess oil.
  9. Sprinkle with salt to taste.


Serve with your favorite sauce. 

Serve along side of Sloppy Joes, Hamburgers, or Sausage and Eggs.
