Looking for an easy way to stretch your grocery budget? Try my Mom’s meatloaf recipe that is gluten free and very kid friendly. Instead of bread crumbs, oatmeal is the filler. This is the only way I ever knew how to make meatloaf and I’m so glad I have this knowledge for my gluten free diet.

Ingredients

  • 4 pounds of ground beef
  • 1 large onion diced
  • 1 large bell pepper (about 2 cups of diced peppers)
  • 3 cloves of garlic or 1 1/2 teaspoon of minced garlic or 1/2 teaspoon of garlic powder
  • 1 Tablespoon of dried Oregano
  • 2 cups of Oatmeal
  • 2 cups of milk
  • 4 eggs
  • 2 Tablespoons of Worcestershire Sauce
  • 1 Tablespoon of Mustard
  • 1/4 cup of Ketchup
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • Water

Let’s Get Started

gluten free meatloaf

1. Preheat oven to 350° Fahrenheit with convection off. Using convection will evaporate all the liquid and dry out the meatloaf. I learned this the hard way with our new oven.

2. Add oats and milk and allow to sit so milk will rehydrate the oats for about 5 minutes. Add eggs, salt and pepper, garlic powder, oregano. Add onions and peppers. Finally add the ground beef.

3. Mix together with your hands until somewhat uniform. This mixture will be wet and that’s good because nobody wants a dry meatloaf.

4. Dump it into a casserole dish (about 9×13). Pat the mixture out to the edge of the dish. Then with your fingertips, gently move the meat away from the sides of the dish to make a moat around the meatloaf.

5. Add water to the moat until the water is almost to the top. The water will help keep the meatloaf moist.

6. Cover the baking dish with oven safe lid or aluminum foil. The covering will keep the meatloaf moist until it is fully cooked.

7. Pop in the over and bake at 350° Fahrenheit for 1 1/2 hours or until internal temperature is 160° Fahrenheit. Remove the cover and allow the top to brown for another 20 to 30 minutes in the oven. At this step in the roasting process, you can add sauce to the top of the meatloaf.

8. Remove the meatloaf from the oven and allow to sit uncovered for at least 5 minutes.

Serve with your favorite sauce.

  • Oatmeal
  • Milk or milk alternative
  • 4 eggs
  • Oregano
  • Salt and Pepper
  • 1/4 cup of Ketchup
  • 1 Tablespoon of Mustard
  • 2 Tablespoons of Worchestershire Sauce

Instructions

  1. Preheat oven to 350° F without convection.
  2. In a large bowl, add oats and milk. Allow it to sit for 5 minutes to rehydrate oats.
  3. Add 4 eggs, salt, pepper, oregano, garlic, onions, peppers, Worchestershire Sauce, ketchup, and mustard. Mix together.
  4. Add 4 pounds of ground beef to oat mixture. Mix together by hand.
  5. Dump in a casserole dish, smoothing out the meatloaf to the edges of the dish.
  6. Make a moat around the meatloaf. Add water to the moat.
  7. Cover and place in the oven. Bake for 1 1/2 hours or until internal temperature is 160° F.
  8. Remove from oven. At this time you can add barbeque sauce or sauce of your choice over the top of the meatloaf. Roast uncovered for another 20 to 30 minutes.
  9. Remove from oven and allow to sit for 5 minutes before serving.
